Brazil Cerrado Natural
Hazelnut, milk chocolate and dried fig; ideal for espresso.
- Ideal espresso base
- Stands out in milk drinks
On the flat lands of Cerrado Mineiro at 1,000–1,200 metres, Yellow Bourbon and Mundo Novo varieties are harvested mechanically and dried with their cherries intact. The natural process gives intense sweetness and low acidity; it is one of the most reliable origins for an espresso base.
In the cup
Hazelnut, milk chocolate and dried fig; creamy, low in acidity and long in the finish.
Suggested brewing
- Espresso: 18 g in, 38 g out, 27 seconds
- French press: 1:15, 4 minutes, coarse grind
Farm and processing
The family estate keeps shade trees and a natural conservation area on its 600 hectares. During drying the cherries are turned 6–8 times a day; drying takes 20 days. Each lot is separated by bean size and moisture; moisture stays between 10.5 and 11%.
Pairing
It matches milk drinks, croissants, hazelnut desserts and brownies perfectly.
