Rwanda Nyamasheke
Red cherry, black tea and sugar cane; elegant and sweet.
- Both filter and light espresso
Red Bourbon grown near Lake Kivu in Rwanda's Nyamasheke region at 1,600–2,000 metres is sorted twice at the cooperative station, from cherry to bean. Rwanda is a newer-generation origin known for consistent quality in small lots.
In the cup
Red cherry, black tea, sugar-cane sweetness and light citrus acidity. Medium-bodied and clean.
Suggested brewing
- Pour-over: 1:16, 94 °C, medium
- Espresso (light roast): 18 g, 40 g out, 30 seconds
Farm and processing
The station accepts cherries from 1,200 smallholders; every cherry received during the day is recorded crate by crate. Wash water is recovered through plant-based treatment. At the end of the season farmers receive an additional premium, which is set aside for school supplies.
Pairing
Match it with ginger biscuits, dried apricot and a thin bitter chocolate.
